We consider a broth to be a light stock enhanced by seasoning. Here, we\u2019ve enhanced a strawberry stock (or juice) with both malic acid and fructose. The acid triggers a saliva release (an effect more commonly known as mouth-watering) that actually causes the brain to find the broth more fresh and \u201cjuicy,\u201d similar to the palette\u2019s reaction to high-acid white wines. Fructose\u2014naturally occurring in berries and almost twice as sweet as sucrose\u2014also effects the brain by heightening its perception of aroma. This bit of science was discovered by the British sensory scientist Andy Taylor who showed that fructose-enhanced fruit juices and purees had more intense fruit flavor than those that used sucrose.
