Although it's possible to take our classes without using a scale, the ingredients in our recipes are given with weights. For some, this might seem awkward. But we've actually done this to make it easier on you; by providing you with accurate weight measurements, we know that you'll find it easier to achieve the same results we get in our kitchen. Of course, you should always feel free to adjust our recipes to suit your needs—the quantities given are often only guided by personal preference.
