What happens when you combine a cookie with a cream puff? Choux au craquelin!A pastry that demonstrates the wizardry of French patisserie innovation better than almost any other, choux au craquelin consists of rich <a href="https://www.chefsteps.com/recipes/choux-pastry">choux pastry</a> topped with a cap of buttery cookie dough that crisps up into a crackly top, filled from edge to edge with crème légère (<a href="https://www.chefsteps.com/recipes/pastry-cream">pastry cream</a> lightened with whipped cream). It’s the breakfast dessert of champions.
