And the truth is, most home ovens lack two key components that result in the soft, pull-apart interior and browned, crisped exterior one wants in a dinner roll: a \u201csteam injector,\u201d which adds steam to the oven and allows the dough to expand sufficiently as it cooks\u2014known as \u201coven-spring\u201d\u2014and enough mass, which enables the environment to stay appropriately hot and moist. Here, we\u2019ve adapted a technique popularized by Jim Lahey at Sullivan Street Bakery, that essentially turns a covered heavy cast-iron pot, like a Creuset or Staub, into a bread oven. \r\n\r\nAfter mixing, proofing, and shaping basic dinner roll dough, we bake our rolls in the covered pan for about 20 minutes. As they cook, the sealed environment of the heavy pot ensures that the rolls bake in a humid and hot environment that\u2019s critical for oven-spring. Then, to achieve the golden brown crust, we uncover the pot and let the tops bake until golden-brown. \r\n","difficulty":"intermediate","featured_image_id":"{\"url\":\"https://www.filepicker.io/api/file/UrlYM2RTKmYRXwwk1Wsl\",\"filename\":\"Dinner_Rolls_15.jpg\",\"mimetype\":\"image/jpeg\",\"size\":311148,\"key\":\"Go2pF7r3QIKY31RkDPXA_Dinner_Rolls_15.jpg\",\"isWriteable\":true}","forks":[{"activity_order":null,"activity_type":["Recipe"],"assignment_recipes":null,"author_notes":null,"cooked_this":0,"created_at":"2013-06-04T21:12:40Z","creator":null,"currently_editing_user":null,"description":"There's nothing quite like warm, soft rolls right out of the oven, or the mouthwatering aroma of freshly baked sweet bread. This recipe was inspired by King's Hawaiian Sweet Bread, which has been a fixture of island life since the 1950s. We wanted to create a version you can make at home. After all, deep citrus notes in sweet bread resonate especially well when it's served fresh. Ours are deliciously supple throughout, with a tender golden-brown crust and a distinct fresh-baked flavor that you just can't get out of the package.\n\nThe tale of this light-textured and subtly sweet bread dates back much farther than King's, to the other side of the world. Portuguese sweet bread is the prototype: yeast-risen and made from flour, milk, eggs and honey, and perfumed with a touch of lemon zest. Historically, this was an expensive bread, reserved for Catholic holidays like Christmas and Easter. So how did a festive bread from Portugal travel across two oceans to reach a Polynesian archipelago in the center of the Pacific Ocean? Supply and demand. \n\nHawaiian sugar plantations had an insatiable need for field workers, and in the mid-19th century Portugal's dismal economy drove families to emigrate in search of better futures. When a fungal blight struck the vineyards of Madeira in the 1850s, the Hawaiian government was only too happy to pay for the agricultural field workers to make the six-month ocean voyage in exchange for at least a year of work in the sugar fields. \n\nIt wasn't long before Portuguese immigrants quickly swapped sugar for honey in their traditional sweet bread. And with sugar plentiful on the islands, this bread quickly became an everyday treat. Sweet bread wasn't the only lasting import that came with the Portuguese; they also brought the ukelele. This four-stringed instrument became just as popular as sweet bread, and created the musical soundtrack synonymous with the sweet life in paradise.","difficulty":"intermediate","featured_image_id":"{\"url\":\"https://www.filepicker.io/api/file/TjG01sc7SzGH6uJIShfD\",\"filename\":\"Sweet Rolls_Final_1.jpg\",\"mimetype\":\"image/jpeg\",\"size\":436248,\"key\":\"qxqxP5soQRGyreVOUUr7_Sweet Rolls_Final_1.jpg\",\"isWriteable\":true}","id":351,"image_id":"","include_in_gallery":true,"last_edited_by_id":16465,"likes_count":157,"published":true,"published_at":"2013-09-10T22:17:38Z","show_only_in_course":false,"slug":"hawaiian-sweet-rolls","source_activity_id":223,"source_type":0,"summary_tweet":null,"timing":"4 hours total; 1 hour active","title":"Hawaiian Sweet Rolls","transcript":"","updated_at":"2014-11-26T23:44:14Z","yield":"1 loaf","youtube_id":"/fDpiKloyppc"}],"id":223,"image_id":"","include_in_gallery":true,"last_edited_by_id":16465,"likes_count":119,"published":true,"published_at":"2013-03-13T01:35:21Z","show_only_in_course":false,"slug":"dinner-rolls","source_activity_id":null,"source_type":0,"summary_tweet":null,"timing":"4 hours total; 1 hour active","title":"Dinner Rolls","transcript":"","updated_at":"2014-10-27T17:18:13Z","upload_count":3,"used_in":[],"yield":"16 rolls, 50 g each","youtube_id":"POslznhrbjQ","tags":[{"id":234,"name":"bread","taggings_count":18},{"id":235,"name":"rolls","taggings_count":1},{"id":236,"name":"side dishes","taggings_count":12},{"id":267,"name":"Dutch oven","taggings_count":2},{"id":268,"name":"baking","taggings_count":49},{"id":28,"name":"breakfast","taggings_count":68},{"id":29,"name":"dinner","taggings_count":204},{"id":272,"name":"side dish","taggings_count":48},{"id":377,"name":"vegetarian","taggings_count":173},{"id":435,"name":"summer","taggings_count":128},{"id":479,"name":"lunch","taggings_count":179},{"id":547,"name":"holiday","taggings_count":69},{"id":10,"name":"barbecue","taggings_count":24},{"id":11,"name":"bbq","taggings_count":29}],"equipment":[{"optional":false,"equipment":{"id":480,"product_url":"http://www.amazon.com/KitchenAid-KSM150PSER-Artisan-Series-5-Quart/dp/B00005UP2P/ref=sr_1_sc_1?s=home-garden&ie=UTF8&qid=1382116165&sr=1-1-spell&keywords=kithcen+iad&tag=delvkitc-20","title":"Stand mixer"}},{"optional":false,"equipment":{"id":173,"product_url":null,"title":"Dutch oven or casserole pan with lid"}},{"optional":false,"equipment":{"id":11,"product_url":"http://www.thermoworks.com/products/low_cost/rt600c.html/?tw=CHEFSTEPS","title":"Digital instant read thermometer"}}],"ingredients":[{"display_quantity":"295","note":"","quantity":"295.0","unit":"g","ingredient":{"for_sale":false,"id":2677,"product_url":null,"slug":"milk","sub_activity_id":null,"title":"Milk"}},{"display_quantity":"50","note":"","quantity":"50.0","unit":"g","ingredient":{"for_sale":false,"id":1341,"product_url":null,"slug":"brown-sugar","sub_activity_id":null,"title":"Brown sugar"}},{"display_quantity":"74","note":"salted","quantity":"74.0","unit":"g","ingredient":{"for_sale":false,"id":2710,"product_url":null,"slug":"butter","sub_activity_id":null,"title":"Butter"}},{"display_quantity":"100","note":"","quantity":"100.0","unit":"g","ingredient":{"for_sale":false,"id":2698,"product_url":null,"slug":"egg","sub_activity_id":null,"title":"Egg"}},{"display_quantity":"7","note":"","quantity":"7.0","unit":"g","ingredient":{"for_sale":false,"id":2771,"product_url":null,"slug":"active-dry-yeast","sub_activity_id":null,"title":"Active dry yeast"}},{"display_quantity":"450","note":"","quantity":"450.0","unit":"g","ingredient":{"for_sale":false,"id":1344,"product_url":null,"slug":"bread-flour","sub_activity_id":null,"title":"Bread flour"}},{"display_quantity":"8","note":"kosher","quantity":"8.0","unit":"g","ingredient":{"for_sale":false,"id":2324,"product_url":null,"slug":"salt","sub_activity_id":null,"title":"Salt"}}],"steps":[{"activity_id":223,"audio_clip":"","audio_title":"","created_at":"2014-05-23T05:09:53Z","directions":"Preheat oven to [f 350].\r\n","extra":null,"hide_number":null,"id":95461,"image_description":"","image_id":"","is_aside":null,"presentation_hints":{"aside_position":"left"},"step_order":0,"subrecipe_title":null,"title":"","transcript":null,"updated_at":"2014-05-23T05:09:53Z","youtube_id":"","ingredients":[]},{"activity_id":223,"audio_clip":"","audio_title":"","created_at":"2014-05-23T05:09:53Z","directions":"Combine milk, butter, and sugar in a pot.
