If it’s corn season and you’re not eating elote, it’s time to re-evaluate some life choices. To make this Mexican street classic, you just char some corn on the cob, smother it in mayonnaise, roll it in crumbled cotija cheese, sprinkle it with chili powder, spritz it with lime juice, and garnish it with cilantro. And that, amigos, es todo. In 20 minutes, you’ll have yourself a spectacular snack that your friends will freak out over. Serve it with steak tacos at your next barbecue, or make some for a snack whenever you’re in the mood for a sloppy treat that’s huge on flavor and oh so simple to prepare.
