If you’ve ever feasted in a Korean barbecue spot—perhaps following an epic late-night karaoke bender—you’ve likely experienced the deliciousness that is kalbi, or galbi. If you haven’t had the pleasure, it works like this: a gaggle of diners gathers around a large table with a grill in the center of it, and they order a mess of meats and vegetables. The meats, kalbi among them, are often served marinated and sliced but raw, and guests grill them up on the spot while snacking on dumplings and swigging beer and soju. Here’s your chance to re-create this delightful experience at home—except you’ll be cooking that marinated meat sous vide. And this is a very good thing. Because when you cook your ribs sous vide, you unlock an incredibly tender texture while also bringing out that delicious beefy flavor for which kalbi is famous. So call all your friends and start sharpening that “Total Eclipse of the Heart” routine. Killer ribs are on the way.
