Here’s how to turn confit into charcuterie.Traditionally a preservation method, rillettes is an easy way to turn confit turkey legs into an hors d’oeuvre, anytime snack, cheeseboard accoutrement, or picnic-perfect protein. To round out the flavor of our turkey rillettes (aka “potted turkey”), we created a golden honey and apricot gastrique which adds a satisfying sweet-tart flavor that balances the savory richness of the turkey confit. You can replace the apricots with whatever dried fruit you prefer (perhaps a very meta Thanksgiving charcuterie with cranberries?) Get ready to plan your next cheese and charcuterie board, ’cause it’s potted turkey time.
