In mere minutes, you can transform two rectangular cake pans, some aluminum foil, and wood chips into a tabletop cold smoker to quickly and easily infuse your favorite foods with fresh wood smoked flavor. Sure, you could invest in dedicated equipment like an outdoor smoker or this cool Smoking Gun. But this inexpensive hack—a method commonly used in professional kitchens—is a great technique to try if you live in an apartment or condo (or otherwise don’t have or can’t have a smoker or grill), or if you want to experiment with different wood types on a smaller scale to find your favorite. With this DIY cold smoker, you can infuse flavor before or after cooking your favorite meats and seafood. It’s also a great way to add smoky deliciousness to just about anything—from oysters to oils, scallops and shrimp to pork chops and peaches. Try smoking pineapple wedges to garnish your next piña colada, or infuse a finishing flake salt with smoke for extra oomph.WHAT YOU’LL NEED:
