Some people just love broccoli—they’ll eat it at any time of day, any day of the week. Others find the texture challenging or struggle with its bitter flavor. We all know the simplest way to get kids to eat this nutrient-packed food: just cover those trees in cheese. For a lighter and more delicate but equally friendly approach, try this: chop up that broccoli, steam with a little butter and salt, blend to a smooth purée, and hit with lemon juice. Serve with a juicy steak and a simple salad for crunch, and see if you don’t convert cautious broc consumers into rabid fans.
