Looking for an easy way to refresh day-old croissants? Simply swipe with simple syrup, generously spread on some homemade frangipane, top with sliced almonds, and bake! Waste not, want not. Rich, buttery, sweet, and nutty—these twice-baked croissants are super delicious, and an excellent way to give new life to leftovers. This recipe yields 16 croissants because that’s how many you’ll make in our guide to mastering croissants, but you can use the techniques outlined below to make as many or as few almond croissants as needed.
