Inspired by tangy mustard-centric Carolina Gold BBQ sauce, we’re going from the garden to the grill with this versatile barbecue sauce that we’ve nicknamed “garden gold.” It all starts with the humble carrot and a chemical reaction. For a bold flavor base, we pressure cook carrots with a secret, surprisingly simple ingredient that increases the Maillard reaction, enhancing the natural earthy and sweet flavor of the carrots while also producing insane umami richness. Like its namesake, this sauce is loaded with pungent mustard and zesty vinegar flavors, plus a few extras for layers of smoky barbecue flavor. But that’s just the beginning. Below we offer three different ways to customize—make it a mopping sauce for your next cookout, turn it into a dressing, or make a dipping sauce that’s either sweet or spicy. Chef’s choice!
