We all agree that <a href="https://www.chefsteps.com/recipes/nine-day-homemade-corned-beef">corned beef</a>—whether chopped up with potatoes in a hash, piled high on <a href="https://www.chefsteps.com/activities/the-ultimate-marbled-beer-bread">rye</a> as a <a href="https://www.chefsteps.com/recipes/one-reuben-to-rule-them-all">Reuben sandwich</a>, or cooked up <a href="https://www.chefsteps.com/recipes/not-your-nana-s-corned-beef-and-cabbage">with cabbage</a>—is a quintessential comfort food. Fragrant, hearty, intensely savory, and delicious—we wanted to capture those sweet, sour, spicy, and meaty flavors of this deli counter favorite, and concentrate them into an easy-to-use and versatile spice blend. Now you can bring those flavors to your next <a href="https://www.chefsteps.com/recipes/flavor-packed-feast-worthy-chuck-roast">beef roast</a>, <a href="https://www.chefsteps.com/recipes/beef-steak">steak</a>, <a href="https://www.chefsteps.com/recipes/the-ultimate-smash-burger">smash burger</a>, or <a href="https://www.chefsteps.com/activities/corned-smash-burgers">patty melt</a>. Heck, you could even sprinkle it on <a href="https://www.chefsteps.com/activities/can-t-f-it-up-fried-chicken">fried chicken</a>, <a href="https://www.chefsteps.com/recipes/ultimate-egg-salad-sando">egg katsu</a>, <a href="https://www.chefsteps.com/recipes/thick-cut-french-fries">French fries</a>, or even <a href="https://www.chefsteps.com/recipes/roasted-beets">roasted beets</a>. It’s really that versatile! We pulled the spices from our <a href="https://www.chefsteps.com/recipes/nine-day-homemade-corned-beef">corned beef</a>, eliminating the kosher and curing salts to make an adaptable seasoning blend. Since it’s salt-free, you can safely season your dish however you desire without worry of going overboard. In curing and brining applications, salt quantities and the ratio of salt to seasonings to water can vary widely. (The ratios in a quick brine versus an equilibrium brine, for example, can be quite disparate!) If you want to use this spice blend as part of a cure or brine, simply follow the recipe you’re using to ensure you have the appropriate quantity of salts, and then sub in this spice blend for the flavoring components. You can keep the spices whole, crack or grind coarsely, or finely grind ’em up depending on how you want to use this blend!
