Always wanted to create an epic multicourse dinner? In our Tasting Menu: Spring feature, we’re sharing recipes from a carefully orchestrated tasting menu we served to friends at a cozy spring dinner party in the ChefSteps kitchen. Our menu description: Chaat masala. Yolk. Orange. Tamarind. Honey. Egg white.

But really, what’s in there? An ornately decorated eggshell layered with cooked egg yolks, orange tamarind syrup, and fried egg-white foam.

Plating suggestion: We nestled the eggshell in a glass cylinder filled with moss and straw to resemble a nest. An egg cup would work too.

Pair with: 2000 Vivamus Tokaji Furmint

Wine note: This sweet wine from Hungary is one of the oldest, most famous, and most expensive wines in the world. It’s like drinking sweet little drops of golden honey tinged with lemon juice.Inspired by L’Arpège Egg—the iconic creation of Chef Alain Passard—this sweet-and-savory dish has a distinctly Indian flair. Egg yolk, chaat masala powder, orange tamarind syrup, and egg-white foam are layered into a hollowed-out eggshell painted with a pattern that recalls a henna tattoo. Don’t worry: You don’t have to hand-paint those delicate shells. That’s what your EggBot is for.
