Whenever we start developing a dish, we picture what the end result will look like. It’s important to start thinking early on in the process about how your dish will look—and to consider how your guests will eat it. For example, which components should go on the spoon or fork at the same time, what should be eaten first to capture it at the proper temperature, and what type of plate or bowl should the dish be served in? After all, there is nothing worse than spending hours upon hours perfecting your technique only to have your masterwork served up in a haphazard fashion. The plateware you use helps your dish tell a story. Is your meal rustic and homey? Cutting edge? Perhaps it’s an ode to a classic Pixar film. It’s important to invest in dishware that can elevate your meal—but it is not necessary to spend an arm and a leg on it. At ChefSteps, most of our porcelain comes from Crate & Barrel and Ikea—with a few statement pieces from local potters and artists to step up our game. When all else fails, get a set of white plates you like—and build your collection from there.
