We came up with this crazy-cute creation using our Flourless Carrot Cake as inspiration. Like that little sweetie, this custardy treat owes its shape and texture to carrageenan, a seaweed extract that’s commonly used as a gel, thickener, and stabilizer in all sorts of commercial foods. But while the original cake delivers a hearty thwap of carrot flavor between layers of cream cheese “frosting,” that same frosting here surrounds rich dark chocolate. Serve this cake as part of our Black Forest Glen dessert, a surefire showstopper at any dinner party. NOTE: Like the carrot cake, this is a gluten-free recipe; just double-check that there’s no gluten in the dark chocolate you’re using.NOTE 2: Be sure to read through the entire recipe before you start.
