Sometimes, the best things in life are simple. Lighting up a charcoal grill. Cracking open a longneck bottle of beer. Making quick and easy food that can feed a crowd. You might be imagining burgers and dogs, corn on the cob, and other summertime American classics. But what if we told you that you could just as easily impress your guests with a hibachi-grilled fish collar and quick-pickled vegetables? Fatty, delicious hamachi collar is a traditional Japanese dish that’s simpler than any grilled meat plate in your repertoire—and the clean, bright flavors of pickled vegetables make for a stunning, and healthy, instant classic. You love to cook—so why would you stick with the ho-hum grilling staples of your youth? This is the summer to redefine your idea of “simple and easy” meals, starting right now with grilled hamachi.
