Go behind the scenes of cookie recipe development with lead R&D chef Matthew Woolen. In this series of four videos, you’ll see how he tackles recipe development, and learn his best creaming, mixing, resting, baking, and tasting tips in this series of videos–available exclusively for Studio Pass subscribers. Matthew kicks things off with a brief discussion of the recipes that started his own ChefSteps recipe development. He and the other chefs picked a few of their favorite pre-existing recipes and then identified what they liked about each and what could be improved. From there, Matthew put together a few trials and gathered tasting notes from Grant, Nick, and Kyl. These trials led to the final Maple Pecan Cookie recipe and easy ideas to upgrade the recipe, part of our new Drop Cookie Class.
