Pastrami is usually something you eat at the deli, with your hands, not something to be served on bone china. Our plated pastrami elevates the humble deli meat into something far more elegant. The melting texture and bold smoky flavor of our beef short rib pastrami pairs superbly with a streak of vibrant cabbage puree and pickled mustard seeds that pop in your mouth. Microplaned fresh wasabi root provides a burst of heat (you can substitute horseradish for fresh wasabi), while dried pumpernickel crisps add crunch. Astringent sorrel leaves are the final bite to this deliciously complex dish. For an alternative bite-sized version of our pastrami, try our Pastrami Bites.
