Like pizza, you can never go wrong with the classic pairing of chilled poached shrimp and sweet-and-spicy cocktail sauce. Even when it’s bad, it’s good.Spend just a little bit of effort on both elements, however, and you’ve got a passed hors d’oeuvre that can outshine even the most extravagant main! Cook the shrimp sous vide for maximum flavor and succulence. Spend a few minutes making cocktail sauce from scratch, packed with a fresh chile ketchup and a mountain of grated horseradish, and you’ll have a deeply savory, sinus-clearing condiment that puts the jarred stuff to shame.Put them together? Yeah, that’s a killer shrimp cocktail.
