A steak so tender that tender is in its name, the tenderloin steak—or filet mignon—is the definition of luxury. So buttery and soft you can cut it with a spoon, a filet mignon’s mild beefy flavor is designed to be complemented by a rich sauce, like a red wine sauce or an au poivre. Unfortunately, the heights of luxury command a dizzying price point, and the last thing you want to do with a beautiful hunk of pricey filet is to undercook or overcook it. Cook that tenderloin steak sous vide, and you don’t have to worry at all. Follow our foolproof method, and you’ll have a filet that’s perfectly cooked exactly the way you want it from perfectly seared edge to perfectly seared edge. You can make it on some glorious weeknight or for an intimate dinner date with a super special someone and serve it up with some fancy steakhouse sides like a radicchio salad and a silky smooth broccoli purée or serve it with a humble baked potato, it’s up to you.
