This enticing, tangy Filipino sauce is pretty hard to resist. This sauce is a blend of cultures through time, more of a cooking process than a recipe. The first settlers of the Philippines—the Malays—braised meat and poultry in vinegar and salt to preserve it. The wave of Chinese settlers after added soy sauce to the mix. It was the Spaniards who named it, since they were taken with the vinegar flavor, which reminded them of their pickling liquids, or “adobar.” The final sauce is one of the most-eaten foods in the Philippines. Simmer chicken thighs in this sauce, then set them atop rice with braised bok choy. Raise your forks to all the people that helped to make this meal possible for you. Then, go in for another bite.
