Monday morning hits you like a ton of bricks. The oh-so-short weekend feels like a distant memory as you shower, brush your teeth, and hunt for your keys. It isn’t until your stomach rumbles that you remember breakfast is the most important meal of the day—and you’re already running late. Normally, you would pop into the coffee shop next to your office and pick up a cling-wrapped muffin to wolf down on the way to your desk. But not today. Because last weekend, you thought ahead: you made a week’s worth of delicious sous vide egg bites with Joule to have on hand for a quick and satisfying breakfast every single day.Ever since Starbucks debuted its sous vide egg bites, Joule cooks have been riffing on the idea at home and sharing the results on social media with #CookWithJoule. Here at the ChefSteps test kitchen, we decided to put our own spin on the phenomenon, too. What’s not to love about sous vide egg bites? Chilled or warm, these airy treats make a great meal-prep dish since they last for at least a week in the fridge.Made with egg whites or whole eggs, these bitty bites take less than 30 minutes to make, and you can top them with whatever you like. Tomatoes and basil on Monday? Bacon and cheese on Tuesday? Mushrooms and chives on Wednesday? Devote a little bit of time on Sunday to prepping these breakfast champs, and you’ll have a full week of feeling like you got up on the right side of the bed—even if you didn’t.
