The ball tip is a small roast from the bottom sirloin. The ball tip, a portion of the sirloin tip that extends into the sirloin, is made up of two of the main muscles of the sirloin tip. Ball tip roasts are small and generally comfortably feed two. They are trimmed of excess fat, but still have a thick vein of fat that runs through the middle of the roast, separating the two muscles.
