Chuck eye steaks are cut from a boneless chuck roll. To be considered a Chuck Eye Steak the longissimus dorsi must be present. The longissimus dorsi is a long muscle that runs from the chuck (shoulder of the animal) to the loin. It is the muscle that makes up the "eye" of a Ribeye Steak and the main muscle of New York Steaks. Chuck Eye Steaks can be thought of as fattier less expensive Ribeyes. Steaks cut from the chuck roll that do not include the longissimus are tougher and are referred to as Chuck Roll Steaks or just Chuck Steaks.
