A full chuck roll comes from the forequarter of the animal. It includes all the major muscles of the chuck including the under blade roast (serratus ventralis, rhomboideus, and splenius), the under blade flap (subscapularis), and chuck eye roll (longissimus dorsi, spinalis dorsi, complexus, and multifidus dorsi). It is common to see a whole chuck roll tied and portioned in a retail setting. When sold this way it will be labeled as a chuck roast and should be sousvide or braised. It is a great cut for pot roast or beef bourguignon. It is also common to see the chuck roll broken down into different roasts and steaks. As an example, the under blade roast can be cut into Denver steaks and the chuck eye roll can be sold as a chuck roll. How and if the chuck roll is further processed depends on where you shop.
