Sometimes referred to as “stew meat,” diced beef is exactly as it sounds: diced extra trimmings from any part of the carcass, excluding the shank. Extra-lean diced beef tends to come from the round, while regular stew meat comes from the chuck. Heel meat is included only if the superficial digital flexor is excluded. In the United Kingdom and Australia, “diced beef” is a pseudonym for “ground beef.”
