Description

Foreshank originates from the lower front legs of a cow, beneath the brisket and above the hoof. This area contains frequently used muscles that the cow uses to walk, which results in a deep, beefy flavor but also meat that is tough and chewy if not cooked properly. Foreshanks are typically portioned into cross-cut shanks. Foreshanks are lean with very little fat and lots of collagen they are best sousvide or braised.
