Description

A full round is one of the main primal cuts of beef. The round is separated from the loin at the ball and socket joint where the femur meets the hip bone. The beef round primal is the rear leg of the animal. It includes the aitchbone (half of the hip bone), the femur bone, and the tibia (shank). A full round includes the top (inside) round, the bottom (outside) round, the eye of round, sirloin tip, heel, and hind shank.
