Ground beef is composed of meat trimmings from throughout the carcass that are pressed through grinding equipment with uniform holes to achieve a consistent texture. Purchasers can specify their desired ratio of fat to meat. Typical combinations are lean (85 percent meat to 15 percent fat), extra lean (90 percent meat to 10 percent fat), and coarse ground chili meat (80 percent meat to 20 percent fat). Customers can also specify how much of their meat they would like fresh or frozen.
