Description

“Special” means that the purchaser can specify which part or parts of the carcass the ground beef originates from. Purchasers can choose chuck ground beef, round ground beef, sirloin ground beef, or any combination. If the origin is not specified, butchers may use 50 percent primal or subprimal cuts and 50 percent trimmings.
