Hanger steaks are the only steak that do not come from any primal. They get their name because they hang in the middle of the carcass, near the kidneys. Hanger steaks have thick connective tissue running through them that can be extremely tough if not removed. The removal of the connective tissue results in two steaks of varying size. There are only two hanger steaks per carcass making them rare, highly sought-after steaks. Hanger steaks have thick muscle fibers and a uniquely rich flavor partially because of its close proximity to the kidneys.
