Description
The Top Round is the upper inner thigh of the animal. It is made up of five muscles, the semimembranosus, the adductor, the gracilis, the pectineus, and the sartorius. The semimembranosus is the largest muscle of the top round. It's a lean muscle of locomotion that is great for steak tartare and carpaccio. Steaks cut from the semimembranosus are called Tucson Steaks and benefit from tenderizing.
