Description
The short loin is subprimal made up of the front part of the loin primal, which runs from the 13th (and last) rib all the way back to the ball and socket joint where the femur joins the hip bone. The short loin is separated from the sirloin by cutting through the last lumbar vertebrae giving the short loin a smooth facing. Two of the most popular steaks come out of the short loin, the filet and the new york. If left intact porterhouses and t-bone steaks can be cut from the short loin as well.
