Swiss steaks are a kind of cube steak (a piece of meat that has been run through a mechanical tenderizer or "cuber"). Swiss steaks can be cut from any section of the carcass except the heel or shank. Swiss steaks tend to be trimmings or facings large enough to serve as single portion steaks. They can not be made of multiple steaks knitted together to create a larger steak (like you can with other cube steaks) and the cuts are only allowed to pass through a mechanical tenderizer once. These steaks are very economical and are a good choice for a dish like country fried steak.
