Description

Top sirloin cap steaks are steaks cut from the sirloin cap. The sirloin cap ( biceps femoris) covers the top sirloin (gluteus medius). It has a thick fat cap that can be trimmed or left intact. In this example the fat cap is excluded. The top sirloin cap steak is also known as a "coulotte", “petit top sirloin,” “rump cover,” or “butt cap.”
