The Under Blade Flap steak is an extension of the Under Blade Roast, a large muscle from the shoulder. It is a single muscle called the subscapularis and is located right under the shoulder blade. It’s a lean and tender cut that has all the flavor of a steak cut from the chuck. The Under Blade isn't something that'll you'll find in a grocery store, but it's gaining popularity with smaller craft butcher shops. Also known as a “Las Vegas strip Steak”, “Bottom Blade Steak,” “Back Iron,” and “Palomilla.”
