A strip loin is the half of a short loin where new york steaks are cut. New york steaks are one of the most common and one of the most popular steaks in the country. Also known as strip steaks because they are cut from the strip loin. A strip loin is made up of three muscles - the longissimus dorsi, the multifidus dorsi, and the gluteus medius (the main muscle of the sirloin). The later is only present on the sirloin end of the strip loin. A boneless strip loin is a whole stip loin with all the bones excluded.
