New York Steaks are one of the most common and one of the most popular steaks in the country. Also known as strip steaks, you can count on finding them in just about any grocery store or butcher shop. New Yorks are made up of three muscles - the longissimus dorsi, the multifidus dorsi, and the gluteus medius (the main muscle of the sirloin). The later is only present on the sirloin end of the strip loin. Center-cut new york steaks are cut from the center of the strip loin and do not include the gluteus medius muscle. Bone-in center-cut new york steaks include a section of the lumbar vertebra and are sometimes called Kansas City steaks.
