Chuck Tender
Description
Despite its name, the chuck tender is a tough cut of meat. It contains a frequently used shoulder muscle called the supraspinatus, which means it has great flavor but can be very chewy if not properly cooked. The chuck tender benefits from a long cook, be it sous vide, in a pressure cooker, or in liquid on the stovetop.
