Full Round, Diamond Cut
Description
The diamond cut is the whole round with the sirloin tip left whole, giving it a triangular—or diamondlike—shape. A large cut that includes much of the foreleg, it is bone-in, excludes the flap muscle (obliquus abdominis internus), and is typically purchased by a retailer to cut into roasts. Packing houses like to offer this cut because the inclusion of the sirloin tip adds weight
