Description
Gooseneck steaks are cut from a large group of muscles from the hind leg of the animal. A gooseneck is made up of the bottom round, eye of round, and heel. When portioning steaks from a gooseneck the heel is removed as well as all ligaments, cartilage, and lymph glands. Steaks are cut against the grain and contain meat from both the eye of round and the bottom round.
