The sirloin tip, also known as the knuckle, is the animal’s quad muscle. It is comprised of four different muscles the vastus intermedius, the vastus lateralis, the vastus medialis, and the rectus femoris. Sirloin tips are attached to the femur bone and generally include the knee cap when removed. A peeled sirloin tip roast includes all the muscles of the sirloin tip. Any excess fat is excluded. In this example the knee cap has been removed.
