Description

The top round is the upper inner thigh of the animal. It is made up of five muscles, the semimembranosus, the adductor, the gracilis, the pectineus, and the sartorius. The top round cap steak is the gracilis muscle which covers the top of the top round like a cap. It is a thin fibrous steak similar to a flank or skirt steak. Also known as a santa fe steak it benefits from tenderizing and shouldn't be cooked past medium.
