Description
The sirloin tip, also known as the knuckle, is the animal’s quad muscle. It is comprised of four different muscles the vastus intermedius, the vastus lateralis, the vastus medialis, and the rectus femoris. Sirloin tips are attached to the femur bone and generally include the knee cap when removed. A 2-piece, peeled, sirloin tip roast consists of only the two largest muscles of the sirloin tip, the center roast (rectus femoris) and the side roast (vastus lateralis). Any excess fat or silver skin is removed and the two are packages together.
