Description
The sirloin tip, also known as the knuckle, is the animal’s quad muscle. It is comprised of four different muscles the vastus intermedius, the vastus lateralis, the vastus medialis, and the rectus femoris. A center-cut sirloin tip roast contains only the center roast (rectus femoris). It is completely trimmed of excess fat and silver skin. Center-cut sirloin tip roasts are small roasts that are great for feeding a small family. Best when cooked medium rare and sliced thin.
