Description

The sirloin tip, also known as the knuckle, is the animal’s quad muscle. It is comprised of four different muscles the vastus intermedius, the vastus lateralis, the vastus medialis, and the rectus femoris. Side-cut sirloin tip steaks are steaks cut from only the side roast (vastus intermedius) of the sirloin tip. They are completely trimmed of excess fat and sliver skin and are generally an inexpensive cut. Sirloin tip steaks are very lean steaks that benefit from tenderizing.
