Sierra steaks are cut from the underblade roast. Just as it sounds, the underblade roast comes from the part of the chuck underneath the shoulder blade. This roast contains three muscle groups the serratus ventralis, rhomboideus, and splenius. Sierra steaks are single muscle steaks from the splenius. They have thick muscle fibers and resemble flank steaks. Sierra steaks benefit from marinating and tenderizing.
