And it’s not just Mickey D's. Whatever fast-food joint you fancy—White Castle, In-N-Out, Five Guys—the common denominator is that crazy-tender, white-and-tan roll.

Ironically enough, this kind of bread is far more technically challenging than an artisanal, rustic bun, and you probably haven't ever seen a recipe for one in a baking book. So let's break it down: What is it about the squishy slider bun that makes it so delicious? And how can you recreate it?

For starters, the shape lends itself to a very pleasant eating experience. Unlike large, pillowy brioche buns or hearty kaiser rolls, the slider bun is shaped like a macaron cookie: flat on top, uniform in size from top to bottom, and much easier to fit in your mouth. It’s also soft and spongy, a perfect vehicle for a thin, tender patty. You can only get those kinds of results with a really wet, flowing dough. And while wet, flowing doughs are sticky and really hard to work with, they're easy to make.

The key to success is simple: keep it cold. Cold dough will feel less gummy, and will slack out more slowly on a work surface. Adding more flour to your hands or your work surface will only yield a harder, crustier, bun, so just refrigerate it periodically if it warms up too much, and be sure to work quickly.

Any questions? at the ingredients label on your jar or packet of bread machine yeast. While containers of regular or dry active yeast just contain one ingredient (yeast), bread machine formulas have a few more. The ingredients listed after yeast are simple dough conditioners that can improve your outcome, especially for fussy doughs.

Ascorbic acid (vitamin C) increases the acidity in the dough, promoting a better fermentation process. (The increase in acidity is not enough for us to taste, but enough for yeast to react.) According to [link http://www.kingarthurflour.com/tips/bread-machine-ingredients.html this helpful King Arthur guide]: "Yeast likes an acidic environment. Although the fermentation process naturally creates an acidic environment, to make yeast even happier, increase the dough’s acidity a bit. You can do this by adding a pinch of ascorbic acid or by replacing some of the liquid with an acidic liquid (a tablespoon of orange juice, lemon juice or vinegar). This is especially helpful when you’re following a sweet bread recipe, one in which the yeast will be slowed down by a larger amount of sugar."

Sodium monostearate is an emulsifier that keeps water and fat well-mixed in bread dough.

If you don't have bread machine yeast, don't sweat it. Dry active yeast will work, too. It's just something to consider if you're looking to optimize the process next time.
{"url":"https://www.filepicker.io/api/file/wykGBe03Saauxr9wZa9a","filename":"slider-buns-add-flour.jpg","mimetype":"image/jpeg","size":242997,"key":"UZg4Ow6T7CpOoGA3pBmg_slider-buns-add-flour.jpg","container":"chefsteps-production","isWriteable":true
Add butter all at once and increase speed to medium.
